We did it! We made a bacon without any sugar. That means you paleo people or whole30 cleansers now have a bacon option that will bless your life. Old Major paleo bacon is made from pasture raised pork belly that is dry cured for two weeks. It is then aggressively smoked in hickory and cherry which gives it a great smokey flavor. The bacon is then thick cut so you can feel like you're only eating 2 pieces of bacon when it's actually 4.

Q: How do you make your bacon taste so good? We've had a lot of bacon out there and this is by far the best bacon we've ever had.

A: Hey There, Thanks for the compliment. We do things the old fashioned way. We use high-quality ingredients, We use a dry brine and we let our bacon cure for 12 - 14 days. When we smoke, we use real hardwood not pellets and we smoke for the duration of the cook. We experience about 18% weight loss during our process because we don't inflate our pork with water. Many producers use vacuum tumblers to shorten curing time, wet brine to increase weight prior to cooking, and often they smoke in cycles.

Q: Is this bacon nitrate free?That include no celery juice nitrates.

A: No, we use sodium nitrite.
