Also known as back bacon, this lean, thinly-cut slice from the pork loin/pork belly is a favorite across the pond - and in our house (blame grad school overseas)! Packages average 3/4 lb, with variation from .5 to a little over 1 lb. We raise mainly heritage and heritage breed crosses such as Berkshires. Raising only small groups at a time, the pigs are mainly pastured (see photos in our feed!) and enjoy their time growing together rotating through the property in electric netting as well as spending time in the garden and the barn rooting up the compost to make it easier for us to collect up and spread on the hay fields that feed our other livestock. In addition to whatever they care to dig up, our pork have their free fill of a nutritious pig ration locally-milled and locally-bought from our family feed store, and get treats such as spent brewers grains from a local brewery.USA
