Merguez is a lamb sausage that gets it’s roots from Northern Africa but has also found a home in French Cuisine. Our Merguez is made with lamb that is produced by Russell Sheep in Eaton Indiana where they spend their lives outside at pasture. Our Merguez is seasoned with a number of ingredients including Harissa, Fennel, Coriander and Cayenne pepper. Our Merguez is cased in collagen casings making it 100% pork-free. This sausage has a great earthy flavor and a little bit of a kick.USA / Indiana / Marion County

Q: Fresh or frozen? If fresh, how long can I keep in fridge?

A: All of our products are frozen. They can be kept in a chest freezer for a very long time (6 months or longer). In an upright kitchen freezer i'd suggest 3 months or less. Thawed out, I'd suggest 10 days or less.
