French Boudin Blanc originates from the champagne region of France. It is an emulsified sausage blend of pasture pork, eggs, cream and milk. We also season it with clove, cinamon, white pepper, black pepper, nutmeg and instead of using bread, we use potato starch to bind it and keep it gluten free! We then poach the sausage before packaging. Cook the sausage in a pan over gentle heat and continuously baste with butter until golden brown.
